This is a good question. Well, we don’t sell mass produced coffee made in big factories. Think artisan, small batches. Often the roasteries we partner with only have specific roasting days a week. So if you order on a Wednesday and there is no more stock available for the latest batch roasted on Monday, you may be waiting for the next roast date.

This is against the Amazon same day or next day culture but actually shows our commitment to fresh coffee. Some roasteries write on the roast date and you will see it is fresh that week.

This is the difference: it tastes and smells fresh.

Often chemicals are used to extract caffeine from coffee – particularly in supermarket bought decaf. We only select roasteries that use beans that have gone through natural decaffeination processes.

These processes are:

SWISS WATER

The Process: Green coffee beans are soaked in hot water to create a “flavour-charged” liquid called Green Coffee Extract (GCE). This liquid is passed through carbon filters that trap only the caffeine molecules. New beans are then soaked in this GCE; because the liquid is already saturated with coffee oils and flavours, it only pulls out the caffeine.

MOUNTAIN WATER PROCESS

The Mountain Water Process is a 100% chemical-free way to decaffeinate coffee using pure glacial water from Mexico’s highest mountain. It is a favorite for organic coffee lovers because it relies on nature, not solvents.

The Benefit: You get a clean, high-quality cup of coffee that is as pure as the water used to create it.

The Process: Coffee beans are soaked in clear mountain spring water to gently lift the caffeine away.

The Result: Because no harsh chemicals are used, the coffee retains its natural antioxidants and rich, original flavor.

SUGARCANE

Often marketed as “Natural Decaf,” this method is popular in coffee-growing regions like Colombia because it uses a by-product of the local sugar industry.

The Process: Ethyl Acetate (EA) is a naturally occurring compound found in ripening fruits and fermented sugarcane. In this process, beans are steamed to open their pores and then bathed in EA derived from sugarcane molasses. The EA bonds with the caffeine and carries it away.

CO2 (CARBON DIOXIDE) METHOD

The CO2 Process is a clean, natural way to remove caffeine using the same carbon dioxide we breathe. It is a favorite for organic coffee because it uses zero harsh chemicals.

How it works: All-natural CO2 is pressurized until it can deep-clean the caffeine out of the coffee beans.

The Benefit: It is incredibly selective. It targets the caffeine while leaving the healthy antioxidants and rich flavors exactly where they belong—inside the bean.

Eco-Friendly: The CO2 is captured and reused in a continuous “closed-loop” system, making it one of the most sustainable decaf methods available
